I’m going to encourage you to eat whatever you like- sweet potatoes, Idaho potatoes, red potatoes, they’re all high in nutrients for a carbohydrate. But technically speaking, red potatoes may be the most nutrient dense.

When you look at the amount of potassium, total amount of minerals, and phytochemicals, they pack a major punch. They’re also what’s known as a high-volume food, meaning you can eat a lot more red potatoes than you could eat something like rice for the same amount of calories. They take up a lot of room in your stomach, making you feel fuller longer.
