Welcome to my new high-protein slow cooker series! When you’re short on time, this is a convenient way to cook a meal for your entire family and use the leftovers as meal prep.
Today, we’re going to make a barbecue shredded beef. This is 450 calories with 45 grams of protein.
This recipe makes four servings, and the foundation is going to be flank steak. You can use top round if you prefer a cheaper option, but I like to use flank steak.
One of the things that I appreciate about this slow cooker recipe is that you don’t have to braise the beef ahead of time. You can toss it right into the crock pot.
Here’s what we’re going to add:
– 2 pounds of flank steak
– 1 cup of no-sugar-added barbecue sauce – (I use Baby Ray’s@sweetbabyrays1107 no sugar added)
– 1 cup of beef broth (I use low sodium)
– 8 oz of mushrooms (I use pre-sliced baby portobello mushrooms)
– 1 sliced onion (I use pre-sliced to save time)
– 1 sliced pepper
– Seasoning: garlic cloves, potassium salt, paprika, black pepper
Next, put it in the slow cooker and let it go for four to five hours on high heat, and dinner will be served for myself and my family.
This recipe takes about five hours before it’s ready to start shredding. When it’s ready, break the beef apart and then lay it down over a bed of cauliflower rice for an easy way to increase the fiber without increasing the calories.
